    I’m battling stage 4 Uterine cancer and have been looking for clean recipes. I stumbled upon your site and decided to give the pancakes a try first. Let me preface my opinion of the pancakes with the fact that I am a typical Southern cook and my diet has consisted of a lot of fat since I was young. So eating clean has been a challenge for me! But these are the BEST pancakes I’ve ever eaten!! They even passed my “teenager” and my “meat and potato” man’s approval!! Yummy!!!

    These were a big hit this morning. I’ll definitely make them again. I added walnuts (baking bit size), bananas, and blueberries. I make my batter a bit on the runny side and cook at high heat for 30 – 45 seconds per side. By runny, I mean they spread out by themselves when ladled onto the skillet. The finished product is a floppy, airy, tasty pancake. We loved everything about these pancakes. On a separate note, I make your black bean burgers often and everyone who tries them loves them.
